Youngsville resident takes first place for apple recipe at State Fair

NC Apple AssociationRALEIGH – Amanda Boury of Youngsville earned first place for her Grilled Turkey Apple Panini recipe.  She received $200 and a blue ribbon Monday, Oct. 20, at the N.C. Apple Association’s Apple Recipe Contest at the N.C. State Fair.

Graham Bass of Dunn won second place and $150 for his Gala Apple Salad, and Alice Spickard of Raleigh took home $75 and third place for her Apple Bacon Bites dish. 

All recipes were judged on taste, appearance and creative use of at least two cups of apples.

The winning recipe follows:

Apple contest 1st place

Grilled Turkey Apple Panini

  • Sliced loaf of ciabatta bread
  • 1 lb. sliced turkey breast
  • 8 ounces Gorgonzola cheese – (winning recipe used a spread with cranberries and walnuts incorporated)
  • Cranberries
  • Walnuts
  • 2 cups sliced apples

Spread gorgonzola with cranberries and walnuts on each slice of bread.  On each half of bread put four to five slices of apples and place two to three slices of turkey.  Grill on a sandwich grill and serve.

Gala Apple Salad
Second Place: Graham Bass of Dunn

  • 3 ½ to 4 lb. fresh boiled split chicken breast
  • 3 hard boiled eggs, chopped
  • ½ to ¾ cups sweet relish
  • 2 cups diced apples (Gala apples used)
  • ¾ to 1 cup mayonnaise
  • Salt and pepper to taste

Remove chicken from bone and place in large bowl. Chop chicken, add eggs, relish and apples. Mix well. Add mayonnaise to taste with salt and pepper. Place on dish. Serve with favorite crackers.

Apple Bacon Bites
Third Place: Alice Spickard

  • 2 tablespoons flour
  • 1 tablespoon brown sugar
  • ½ teaspoon curry powder
  • ½ cup shredded sharp cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 cups peeled and diced North Carolina apples
  • 2 cups self-rising flour
  • 1 stick butter, melted
  • 1 cup sour cream

Mix flour, brown sugar, curry powder, cheddar cheese and bacon together in a small bowl. Add diced apples and mix together. Set aside.

In another bowl, mix self-rising flour, melted butter and sour cream to make a batter. Drop 1-2 teaspoons batter into ungreased mini muffin tins. Bake at 400 degrees for 12-15 minutes. Makes about 48 Apple Bacon Bites.
